Our dried gongcai is naturally sun-dehydrated with firm texture and standard dryness. Proper soaking perfectly restores its bright green color and signature long-lasting crisp taste, avoiding mushy, soft or bland results. Standard Soaking Steps: 1. Take an appropriate amount of dried gongcai and place it in a clean container. Pour room-temperature water or warm water (30-40℃) to fully submerge the strips. 2. Soak for around 30 minutes until the strips are fully expanded, plump, bright and green. 3. Rinse the rehydrated gongcai 2-3 times with clean water to remove fine dust and impurities, then squeeze out excess water. 4. Ready for hot pot, cold salad, stir-fry, soup, salad and all kinds of cooking. Notes: Do not soak in boiling water for a long time, as high temperature will destroy its crisp texture and make it soft and sticky. For the best flavor, cook immediately after soaking. If storage is needed, keep it sealed and refrigerated and finish within the same day.
